This recipe is an old classic revisited and still works incredibly well with the old faithful fish and chips. We have added our own Chilli sauce to this and it just works so well and if we can be so bold to say it takes mush peas to the next level 🤭, try it yourselves and please let us know.
Ingredients Serves: 4
300g Frozen peas (fresh if in season)
2 knobs Butter
5g Fresh mint (finely sliced)
1-2 tsp Meline's Chilli sauce
2 pinches Salt
Squeeze of lemon
Freshly ground black pepper
Bring a shallow pan of lightly salted water to the boil over medium-high heat. Add frozen (fresh) peas, and cook for 3 minutes, or until tender.
Drain peas, and transfer them to a blender or food processor.
Add the butter, salt, and pepper, to the peas and then process until blended, but still thick with small pieces of peas (not smooth).
Now add the fresh mint and Chilli sauce give the blender two pluses just to incorporate the ingredients but not to blend them.
Adjust seasonings to taste, and serve immediately (as always if you need a little extra spice, put a little more in).
